We recently returned from our cruise to the Southern Caribbean on Celebrity Cruise lines. I must say this was THE best vacation we have been on in a long time.
More on the cruise line later. Believe me, it was top notch. I am still missing my afternoon tea service with Jonathon!
Our first stop (after a day at sea) was Barbados. We have never been there before. I have heard wonderful things about the island. We started the day out with breakfast is our sky suite on the veranda. How cool does that sound? Believe me, it was! Then, off to the gym for a little workout. I was so proud of myself. I actually worked out 5 of the 7 days!
We had a late morning excursion. We were able to visit the duty free shops just at the end of the pier before heading for our excursion. The excursion was Taste of Barbados. We visited Foursquare Rum Factory and did a tour complete with samples. There was the cutest little info house that was the perfect eggshell blue. I missed the name of the plant, but all of the ladies received one to put in our hair. Married ladies placed them on the left and single ladies on the right. Or was it the other way around? LOL
Next stop - Sunbury Plantation House. What a gorgeous home. I am not a huge fan of antiques, but this place was beautiful. After the tour of the home, we all met under a HUGE tree for our Rum Punch, fish cakes, Bajan chicken and plantain samples. Our hostesses were Donna (one of the owners) and Princess Fiona. They were truly comical with their playful bantering with one another. They enjoyed the drinks almost as much as we did. I'll share the recipe for the Rum Punch later in this post.
We were able to see a lot of the island on our tour. It is really a beautiful island with a lot of history.
Rum Punch Recipe - Barbados Style
"One of sour,
Two of sweet,
Three of strong,
And four of weak."
- 1 cup freshly squeezed lime juice
- 2 cups simple syrup
- 3 cups Bajan rum
- 4 cups water
- A few dashes Angostura Bitters
- Grated nutmeg
In a pitcher, combine the lime juice, syrup, rum, water, and bitters and stir well. Pour into glasses filled with ice, and sprinkle the nutmeg over the top.
Yield: 2 1/2 quarts
2 measures Rum
2 measures of Velvet Falernum
3 dashes of angostura bitters
Fill glass with ice - add rum, Falernum and 3 dashes of bitters on top
Relax and Enjoy!!!!!
