Salad Competition



  This past Thursday, we had a Salad competition at my job. Oh, how I love a good salad. There really weren't any criteria for what your salad had to have in it. That is how we came to have the Animal Salad - more on that later.

 I opted to make a Cobb Salad with chicken. I have never made on before, but I sure have eaten my fair share. There is A LOT of chopping involved. I really don't mind the chopping - it's kind of therapeutic for me.

 I didn't really follow any recipe. I just remembered what I usually have in them. I choose to include the following:

  • Romaine Salad mix
  • Boiled Eggs
  • Chicken Breast (baked with garlic, sea salt, pepper and a dash of Mrs. Dash)
  • Crumbled Blue Cheese
  • Green Pepper
  • Red Onion
  • Mushrooms
  • Bacon Bits
  • Tomato
 I completely spaced including the avocado. I love avocado. This won't be my last time making it, so I can include it on the next one. For the chicken, I would suggest baking it only because boiled chicken tends to be dry.  If you have a trick for non-dry boiled boneless chicken breasts, I'd love to have it.

  We had over 25 delicious salads ranging from fruit salad to the Animal salad. There was coleslaw, Asian salads, pasta salads, etc. My favorite was the couscous salad. DELISH!

 SO, the Animal Salad. Basically, it was all meat - venison, craw fish, whole shrimp, chicken, steak, pork. They guy who made it seasoned everything nicely - so I am told. I didn't try it. It wasn't all mixed together, just sort of laying out each meat  by itself.

 It was a competition and guess who won? The ANIMAL salad. Isn't that funny? It was great fun and we'll likely do it again. I for one can not wait.......
