This is one of the recipes from the SHRED book by Dr. Ian Smith. This recipe is from his wife, Triste. It is delish and under 200 calories per serving. The picture below is from my iPhone.
Triste's Chicken Noodle Soup
1 / cups egg noodles
1 tablespoon butter (I used Country Crock)
1/2 cup chopped onion
1/2 cup chopped celery
3/4 cups sliced carrots
1 1/2 cup diced, cooked chicken meat (I used breast)
6 cups chicken broth
1 1/2 cups veggie broth
1/4 cup water
1/2 tsp dried basil
1/2 teaspoon dried oregano
1 teaspoon poultry seasoning
1 teaspoon salt
Salt and Pepper to taste
Bring large pot of water to a boil. Add egg noodles and boil until tender - 5 to 10 minutes.
In a large pot, melt butter. Cook onion and celery - just until tender.
Add all other ingredients and bring to a boil, reduce heat and let simmer for 15 minutes before serving.
Serves 4.
